Sheet fed companies, however, can order 90% of the products that they generally use in the afternoon on one day, and have it delivered the following morning.

There are those who say that sheet fed quality is superior to web, but that simply is not true. What is true is that there are papers available for web, that are lower in quality than the usual stocks used in sheet fed jobs. This is because the cost of paper on very large web runs is the largest component of the order, so there is a lot of pressure to have less expensive papers. Sheet fed orders tend to use less stock, so the cost differential in using a higher quality sheet is minimal. On web you can have the same stocks used in sheet fed (e.g. 200m gloss coated text) if requested.

As for the print quality, that is more a question of the intended quality of the machine. In both sheet fed and web equipment there are your Cadillac and Volkswagen equivalents. The age of the machine and how it was maintained will also play a role in the quality of the finished printed item.
